Recipe: Protein pancakes for cyclists

Alison Hayward is a naturopathic nutritional therapist who has shared a fun way to get your protein fix this pancake day, perfect for active cyclists

You will need

  • 25g protein powder*
  • 100ml milk or plant based mil
  • 50g porridge oats
  • 1tsp cinnamon powder
  • 1/4 tsp baking powder
  • Spritz of coconut oil
  • box of berries of your choice

(makes 4 pancakes)

Method

Blend all the ingredients together in a blender until they form a fine power, then add the milk.

Heat some coconut oil in a pan on a medium heat until it fully covers the bottom.

Add 1/4 of your mixture for one pancake and cook on a high heat for around 50 seconds, flip and cook the other side for another 50 seconds.

Place in a plate and top with berries for added vitamins and antioxidants.
